Old Fashioned Swiss Potato Sausage Soup

      Old Fashioned Swiss Potato Sausage Soup.
      This delicious soup from my childhood came from my father's family in 
      Highland, Illinois, a region also called New Switzerland. It's simple farm
      fare from the Old World. I found this recipe in a collection from my Aunt
      Jennie Latzer Kaesar's recipes that the family printed for her in 1978 in
      honor of her 100th birthday.
      Aunt Jennie lived in Highland her entire life and was the keeper of the
      local history. In 1970, when she was 92, she completed and published
      'The Settling of Highland,' a translation of the letters of the founders 
      of New Switzerland. An abridged version of one such letter is on the back.

Description

This soup recipe came from my paternal grandmother's family who were Swiss immigrants living in Highland, Illinois.


Ingredients

Directions

  1. Peel and dice 6 medium potatoes and 1 small onion. Boil with 1/2 bay leaf, 2 cloves, salt and pepper in 1 quart of water until tender.
  2. Brown 1 cup flour in shortening (or butter) to a dark golden brown. Add 1 quart of water and bring to a boil.
  3. Mix 1 and 2 together. Add a ring of Mettwurst (a smoked beef sausage - you can substitute bratwurst or keilbasa) and simmer 1/2 hour. Cut up the sausage and add it to the soup.
